Here, smallholder producers cultivate coffee on farms averaging fewer than five hectares, often intercropping with food crops and growing organically by default. Handpicked cherries are delivered to nearby washing stations, where teams carefully natural process them. The cherries are sun-dried on raised beds for up to two weeks, carefully turned, sorted, and protected throughout for quality and consistency.
