Maria Cristina out of Southern Colombia is a deeply passionate female producer that we have had the honor of working with for the past six years. Her fruit forward cup profile will keep you coming back for more with its green apple acidity and plum sweetness.

Farmlevel Story
This Guatemalan coffee from first-generation coffee producer Jacinto Domingo Marcos returns to our menu for the third year. Over the past fifteen years, Jacinto and his wife have been operating their farm, Yulm’on Canalaj, nestled between two villages in Huehuetenango. Each harvest goes through three picking passes to ensure that the cherries are picked at their peak ripeness. Selectively picking is generally laborious and expensive for the producer, as it requires more time and effort, but the alternative of stripping trees of all cherries in one pass allows under ripe cherries to end up in the lot and lowers the quality of the coffee. Once the cherries are harvested, they’re transported by horse to get depulped in the same day. Jacinto uses plastic tubs of water to ferment the coffee for 48 hours. The coffee is then sundried on patios for six days.
Jacinto takes pride in his work, and hopes to focus on his agronomic practices to continue growing and producing high-quality coffee. This coffee is a culmination of patience and beauty by Jacinto and his wife.
