Farmlevel Story
This is a truly unique and memorable coffee, produced by Antonio Gonzales at Finca El Hato in Guatemala’s Fraijanes region. Together with his wife, Isabel, Antonio cultivates and processes coffee on the farm using both honey and natural methods.
This particular lot features a Maracaturra, which is rare and sought after. Maracaturra is a rare variety that is a cross between Marygogype (contributing genes of the large seed size) and Caturra, which is high yielding. This lot underwent natural processing—where the coffee cherry is left whole and dried intact—resulting in a rich, fruit-forward profile.
While Antonio manages cultivation and farm operations, Isabel oversees all aspects of processing. What makes this year’s lot especially meaningful is that Isabel not only led the natural processing, but also brought together a group of her closest friends to assist.
Natural processing is both delicate and labor-intensive. The cherries must be dried slowly and evenly to avoid spoilage, with constant turning to ensure proper fermentation. As the pulp ferments beneath the skin, it imparts fruity flavors and a distinctive character to the cup. It’s a method that, while challenging, is both environmentally and economically sustainable. By reducing water use and cutting processing costs, Antonio and Isabel can reinvest in their farm and support neighboring producers with essential resources and materials.
