Farmlevel Story
Kayon Mountain Farm was established in 2012 by Ismael Hassen and his family. Located in the densely forested Oromia region, in the Odo Shakiso district of the Guji zone, the farm spans an impressive 500 hectares, 300 of which are cultivated while the remainder is preserved as wild forest. The farm produces high-quality coffee using socially responsible, biodynamic farming practices. Coffee plants are grown under a shade canopy of indigenous trees, which slows cherry maturation and enhances seed density. Compost and natural fertilizers are used to nourish the plants, while organic methods manage weeds and pests—avoiding harsh chemicals to protect the region’s biodiversity. The farm’s rich red soil, superior tree genetics and meticulous processing combine to create a distinct and highly sought-after flavor profile.
While Kayon Mountain Farm primarily focuses on naturally processed coffee, we were fortunate to secure an outstanding washed lot. After hand-harvesting, the cherries are depulped and fermented in small batches. Following fermentation, they are washed and slow-dried on raised beds for 2-3 weeks. The extended drying time ensures the parchment remains intact, preserving the vibrant flavors within the seed. Once dried, defective beans are carefully hand-sorted to deliver only the highest quality.
