Behind the cup
This beautiful washed coffee from producer Jacinto Domingo Marcos comes to us from the Huehuetenango region. Washed coffees from Guatemala are often citric, light and sweet, and this one is no exception. It carries a vibrant orange-like sweetness, complemented by round, full-bodied notes of plum and cane sugar, creating a layered and complex profile.

Farmlevel Story
For the fourth year, we are honored to offer this Guatemalan coffee from Jacinto Domingo Marcos, a first-generation coffee producer. For the past sixteen years, Jacinto and his wife have been operating their farm, Yulm’on Canalaj, tucked between two villages in Huehuetenango, Guatemala.
Each year’s harvest consists of three selective pickings to ensure that the cherries are picked only at their peak ripeness. Selectively picking, as opposed to strip picking, is laborious and expensive for the producer. Though there is more up-front cost, the resulting quality is increased dramatically, which garners higher prices.
Once the cherries are harvested, they are transported by horse to be depulped the same day. Jacinto uses plastic tubs of water to ferment the coffee for 48 hours, before washing and then sun-drying on patios for six days.
Jacinto takes pride in every step of his work, emphasizing agronomic practices to consistently grow and produce high-quality coffee. This coffee is a work of patience and beauty by Jacinto and his wife. We hope you enjoy it as much as we do.
