Gerson Mora has spent over 25 years developing Villa Pastora, an 8-hectare farm in the vereda of Sinaí. What began as a family legacy has grown into a focused operation built around quality, sustainability, and long-term stewardship of the land.

Working alongside his wife and children, Gerson cultivates multiple varieties, including Bourbon Aji and Bourbon Rosado, while maintaining a diverse ecosystem of native trees and wildlife. His approach avoids chemical inputs and emphasizes careful fermentation practices, often extending fermentation times to refine structure and expression in the cup.

Beyond his own farm, Gerson supports neighboring producers by sharing fermentation knowledge and best practices, strengthening quality across the region and reinforcing a shared standard of production.
