Farmlevel Story

Rwanda Isimbi: Named after the Kinyarwanda word for the white at the top of a volcano that’s also used to refer to something pure, Isimbi embodies a clean and pure cup of coffee. Cherry is selectively handpicked to remove any damaged or underripe cherries. Washing stations only accept perfectly ripe cherry, so farmers take more care when they pick to ensure the maximum amount of cherry is accepted. Working with other organizations in Rwanda, Rwacof mill invests heavily in farmer training and good agricultural practices. Rwacof’s Farmer Field School shares information with all their producer partners about best agricultural practices, conservation tactics, the importance of picking only ripe cherry and more.


Guatemala Hunapu: We are excited to offer this coffee back on our menu for the seventh year, though we have been working with Luis Pedro Zelaya for over ten years. Luis Pedro is a fourth-generation coffee farmer with an agronomic background. He pays impeccable detail to the growing and production of coffee, implementing innovative techniques to produce high quality crop year after year. The city of Antigua holds a prevalent colonial history visible in its infrastructure and lasting effects on indigenous groups.Coffee produced through the Hunapu project highlights Luis Pedro’s attention to the land and its history. Selecting only the highest quality coffee and sorting it out for specialty processing takes advantage of the value of bourbon and other specialty varieties. The goal is to generate resources to increase the infrastructure for indigenous communities to produce high-quality coffee. High quality coffee is easily produced in the nutrient-rich volcanic soil from the three volcanoes that surround Antigua. Coffee sorted for Hunapu are 100% bourbon cherries that are delivered and sorted at Beneficio Bella Vista. They are processed by a long, cool fermentation and washed thoroughly before being dried on raised beds.
